   Lomo Saltado
   ============

   Ingredients
   -----------

   - 1 Kg of beef tenderloin or other tender steak
   - 1/4 cup red wine, e.g., Burgundy
   - 2 tablespoons of crushed garlic
   - 2 medium onions cut in strips
   - 4 tomatoes, seeds removed, puréed in a blender
   - 5 potatoes peeled and cut into strips for frying
   - 1 yellow Peruvian Chili Pepper (aji) cut into thin strips
   - 1 Tablespoon of vinegar
   - 2 Tablespoons of soy sauce
   - vegetable oil for frying
   - salt and pepper
   - culantro (or substitute with cilantro)

   Preparation
   -----------

   1.  Cut the meat into thin strips and marinate them in the wine for 1 hour.

   2.  Use a wok to cook garlic in oil over medium heat and add the meat.
       Reserve the juice.

   3.  Add the tomato purée, salt and pepper. Cook a few minutes.

   4.  Add the soy sauce while stirring the meat in the wok.

   5.  Add the onions, aji strips, cilantro and vinegar. Combine the juice from
       the meat.

   6.  Fry the potatoes in a separate pan and add to the other ingredients.

   7.  Serve the dish with white rice.


   Ingredientes: (para 6 personas)
   -------------------------------
   - 1/2 kilo de carne de res (lomo), picada.
   - 2 tomates grandes, picados en tiritas.
   - 2 cebollas, picadas en tiritas.
   - 3 cucharadas de vinagre tinto.
   - 3 cucharadas de agua.
   - 2 cuchardas de culantro, picado.
   - 1 cucharada de ajo molido
   - 1/2 taza de aceite.
   - 6 papas peladas, picadas y fritas en tiritas.
   - Sal y pimienta al gusto.

   Preparación
   -----------

   1.  Sazonar la carne con sal, pimienta y ajo.

   2.  Calentar la mitad del aceite en una sartén y freÃr la carne hasta que
   dore.

   3.  Retirar y reservar caliente.

   4.  En la misma sartén, calentar el resto del aceite y freÃr la cebolla, el
       tomate y el ajà con un poco de sal, removiendo constantemente.

   5. Verter el vinagre y el agua.

   6. Cuando rompa el hervor echar la carne y el culantro.

   7. Remover, dejar que hierva durante 3 minutos y echar las papas fritas.

   8. Remover y servir con arroz blanco.
